Home Canning Tomatoes and Green Beans Workshop August 24 in Curtis!

Nebraska Extension will be teaching a class focusing on home food preservation. The class will be taught on Thursday, August 24, at the Curtis Community Center, starting at 6 PM CT. David Lott, District Horticulture Extension Educator, Extension Master Gardeners, and members of the Wellfeet County Gardeners Garden Club will be teaching the class. All activities will emphasize the latest USDA home food preservation techniques for safe home food canning. 4-H youth that are interested in food preservation projects are especially encouraged to attend.
Class topics are as follows:
Safe Canning Processes – Participants will learn the latest USDA recommendation for home canning practices to reduce the chance of foodborne illness as a result of outdated recommendations and processing.
Canning Equipment Selection and Maintenance – A variety of equipment will be discussed for water bath and pressure canning, with helpful hints on how to use and care for equipment. Evaluating, purchasing, and using used equipment from garage sales and auctions will also be covered.
Water Bath Canning – Discussion and demonstration will teach participants how to process food though the water bath canning process safely. Tomatoes with added acid will be processed by this method.
Pressure Canning – Discussion and demonstration will teach participants about the equipment and safe use of pressure canners, and how to safely process food that requires the pressure canning method. Green beans will be processed by this method during the class.
There is a $10 fee for each participant to cover class materials and the finished food products to take home to eat after the class. Pre-registration is required by Thursday, August 17, by calling the Nebraska Extension Office in Frontier County at (308) 367-4424.
